So, i need to be sure all this will work out.. My plan is to order the BBS02 mid drive motor 750w, Gear Shift Sensor, In-line brake cut off Sensor, 48v Super Shark Battery Cells: Panasonic GA 17.5ah 40a BMS 3-pi... Charger3A (Included) and the Programming Cable.. My bike is this Trek 4300 I'm keeping the front chain ring for now, and will eventually add some disc brakes.. what do you think ? Will the in-line brake sensor work with my mechanical brakes ?

Yup, a good donor bike. I would use (and did use on my Trek) the magnetic switches that you can fasten on to the brake handles. I used double sided tape. They have worked well for me for 1200 kilometers. And can be switched over to the hydraulic brakes when you get them.
That bike looks like a good conversion candidate to me. The BBS02 kit comes with a chainring so I don't think you will be able to keep the existing chain ring unless you have some adapter. Also, the kit comes with replacement brake levers with a motor cutoff switch built in. I would recommend you just use those instead of the inline sensor.
