I have converted one to an ebike. It was a Talon1 and the conversion was fairly straight-forward. I use it mostly to tow a little trailer. The heaviest load I've towed had a bag of cement (20kg) and a dog(8kg). Went up some decent hills on paved and dirt roads and did ok, but the heavy load knocked the performance around a bit.
The Talon has 2.4" tyres which should work pretty well for a hunter. You'll want the biggest battery you can fit and the 1000w motor. I've done over 4000km since February mostly on roads and have only needed to clean and lube the chain which is still OK.
I'm looking at doing some stuff like greasing the motor and having a big clean of everything around the 12mth mark. The chain and brake pads might need replacing then too, as I'll be around 5000km. I think the Talon has done well so far.
